Tequila is a type of alcohol that is made from the blue agave plant, a large succulent with spiky leaves that belongs to the lily family. The blue agave plant takes around a decade to mature and be ready for harvesting, and the agave plants used in the production of Volans tequila are grown in the Los Altos region of Jalisco, Mexico at a high altitude. This cool and dry climate allows the agave plant to mature more slowly, resulting in a larger and sweeter piña, or the heart of the agave plant.
The agave plants used in the production of Volans tequila are grown using sustainable farming practices by the Estate of Felipe Camarena and his family. Once the agave plants are harvested, the male plants are carefully removed and the agave piñas are roasted in an oven to break down the sugars and fibers. They are then shredded using a machine called Igor the Shredder, and the resulting agave fibers are mixed with water to create the agave juice. This agave juice is then fermented using a combination of water and wild yeasts, and the resulting liquid is distilled to create the final tequila product.
