Maple Banana Bread (vegan)
Marcus' mom baked her banana bread in coffee cans, a kitchen custom some believe dates back to the Depression. Here, Jamie has recreated this classic American favorite using nutritious, sustainable ingredients. You'll see there's no white sugar, but the bananas and maple syrup provide the s satisfying sweetness. The white flour found in most banana bread recipes gets a healthy upgrade to oat and spelt flour, which add protein and minerals.
The chocolate chips are optional (but why would anyone leave them out?) Sometimes Jamie adds toasted walnuts, too.

Method
Preheat oven to 350 degrees F.
In a large bowl mix all the dry ingredients.
In a separate bowl mix together the banana, maple syrup, milk, and vanilla.
Combine wet ingredients with dry ingredients. Stir in chocolate chips.
Stir until well combined
Wipe loaf pan lightly with oil.
Pour batter into pan and bake 40-45 minutes. A toothpick inserted into the center of the bread should come out dry.
Allow to cool thoroughly before removing from pan.

- 1 cup spelt flour
- 3/4 cup oat flour
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon freshly ground nutmeg
- 1/4 teaspoon real salt or other high quality salt
- 1 cup pureed overripe banana
- 1/3 cup pure maple syrup
- 1/2 cup flax milk or almond milk
- 1 teaspoon vanilla extract
- 1 cup non dairy chocolate chips (optional)

- Skip the white flour and instead use whole grain flours like oat or spelt. Jamie makes many of her own flours in a high- powered blender, but they're readily available online and in some supermarkets. Marcus cautions to buy only what you'll use soon. It's best fresh.
- Rethink your sweeteners. White sugar offers nothing nutritionally. Instead use maple syrup, honey, or coconut sugar.
- Cut cholesterol out of your recipe by using a plant -based "milk" [Jamie likes flax milk ) in lieu of cow milk.
