Black Bean Mole Recipe
- ½ cup small diced onions
- 1 tbsp cooking oil
- 1 tbsp chopped garlic
- ¼ tsp ground cumin
- 2 cups cooked black beans
- 1 tsp chili powder
- 1 dried ancho chil, soaked and water saved
- ½ cup soaked walnuts, almonds, pecan and/or peanuts
- 2 tbsp chocolate powder
- pinch of cinnamon
- salt to taste
In a sauce pan heat the oil on medium heat. Slowly sweat the onions and garlic.
Add the Cumin and cook for 1 minute.
Add the rest of the ingredients. Use the left over water from the ancho chili or from beans if you have. Cover and cook very slowly for 1 hour. Add more water if needed. You will need a sufficient amount of water blend the mole.
Place contents into a blender or an immersion blender in the pot. Blend until smooth. I like it to be a thick sauce consistency.
