Hemp & Apple Gazpacho Recipe
- 2 large tomatoes diced small
- 1 large red pepper diced small
- 1 large cucumber diced small
- ½ cup hemp seeds/nuts
- 2 lemons juiced
- ½ lime juiced
- ½ cup extra virgin olive oil
- 2 tablespoons hemp oil
- 1 clove of garlic chopped
- 3-5 basil leaves lightly chopped
- ½ teaspoon flat leaf parsley lightly chopped
- salt to taste
Mix all the ingredients together and refrigerate for at least one hour.
Additional notes:
If you would more liquid in this recipe I suggest adding ½ cup of cucumber or tomato juice.
You may hold this for a day or so. The more it sits the cucumbers will soften but the apples stay crisp. I like will let it sit for eight hours before eating but not necessary.
