Join chef Marcus on a brewery tour in the Aroma Thyme van! It's filled day at two great local breweries in the Roundout Valley.
We meet at Aroma Thyme at 11am on Saturday October 8th for a some local cheese before we venture off. First stop is Arrowood Farm Brewery for a tasting. Arrowood Farms is born from the idea that great beer is grown from the ground up. Their obsession with craft is inspired by nature. They begin with the soil, cultivating hops and grain that never travel more than an acre from field to tap. Brewing in small batches with the freshest ingredients, we produce sustainable beer that represents local flavor and the community that surrounds them. And then we are off to New Paltz Brewing, which is not in New Paltz. It's a brand new addition to the Town of Wawarsing. Originally from New Paltz now they are making award winning Bavarian style craft beer here. Take a tour with the brew-master and taste more beer! Here is where we will roll out lunch. Enjoy some wraps & salads and cheese. This tour is $69 and includes food and beer and other beverages. Roasted Brussel Sprouts with Blue Cheese
serves 2-4 sides 1 1/2 pounds Brussels sprouts, ends trimmed and yellow leaves removed and cut in half 3 tablespoons coconut oil ¼ teaspoon sea salt ¼ cup blue cheese crumbles to taste freshly ground black pepper 1. Preheat oven to 400 degrees. 2. Place trimmed Brussels sprouts, coconut oil & sea salt in a bowl. Mix and make sure the brussel sprouts are covered. Pour onto a baking sheet and place cut side down 3. Roast in the preheated oven for 25 to 35 minutes. Reduce heat when necessary to prevent burning. Brussels sprouts should be darkest brown, almost black, when done. 4. Toss Brussel sprouts in a bowl with half of the blue cheese. Serve in a bowl and garnish with the remaining blue cheese. Add fresh cracked black pepper. Chef Notes: The addition of cooked bacon or a few drops of aged Balsamic compliment this dish perfect. Save any of the Brussel sprout leaves that have separated before cooking and add them to a salad. This dish can be served hot or room temperature. And you can cook extra and keep them in the refrigerator up to five days. Aroma Thyme Bistro serves 6-8 sides 2 Cups Frozen Organic Corn Kernels 2 Cups Organic Coconut Milk sea salt to taste This is a super easy recipe that our guests love. 1. Simmer the corn and coconut milk in a covered pot for 10 minutes on low heat. 2. Add half the corn and coconut milk into a blender and pulse. It's up to you how much you want to puree the mixture. This is where the corn releases the natural sweetness locked in the kernels. 3. Add the salt to taste and serve. Additional notes: A touch of cumin and/or one Cardamon Pod works well with this recipe. Also you can small dice a Vidalia Onion and cook that ahead of time and let it simmer with the corn and coconut milk. There is no reason to add milk, butter, cream or sugar as many recipes call for. Corn and coconut milk both have a natural sweetness that complement each other very well. Yes it's that simple.
