The tahona wheel is a traditional tool used in the production of mezcal, a type of distilled beverage made from the agave plant in Mexico. The tahona wheel is used to crush the agave plant and extract its juice, which is then fermented and distilled to create the final product.
Traditionally, a horse was used to pull the tahona wheel because it provided a reliable and strong source of power. The tahona wheel is typically made of stone and can be quite heavy, so a horse was able to provide the necessary strength to turn the wheel and crush the agave. In modern times, the tahona wheel is often replaced by more efficient and mechanized methods of extracting agave juice. However, some mezcal producers still use the traditional tahona wheel, often as a way to preserve the authenticity and craftsmanship of their product. In these cases, a horse may still be used to turn the wheel, although other methods of power may also be used. A huge thank you to anyone and everyone who has helped us the last 20 Christmases, since 2003!
I don't think we have ever sat around a tree and opened presents and my kids are 23 and 20. My restaurant opens up as a "no-questions-asked" Christmas Day Soup Kitchen. We deliver meals to anyone who needs them. They may be in a hard financial time, or they may not. They may be alone and homebound, or who knows what the situation is. The only thing we ask is for their address so we can get them a meal. Of course, it's not just myself alone that makes this happen. I can't cook and deliver 400-500 meals. It's the amazing people who volunteer, donate and help us spread the word. There have been many people who have celebrated their Christmas Day with us since 2003 by showing up and helping cook, clean, serve, deliver and do what has to be done! No matter what the weather has been. Here are some pictures from this Christmas Day. Great article in our paper on our Christmas Day soup kitchen.
#HudsonValley #SoupKitchen #ChristmasDay #Ellenville We’ve gotten a lot of new amazing mezcals this week! But let’s not forget about tequila!
We just scored a few bottles of Siette Leguas 70 year anniversary edition! It’s made from all silvestre (wild) agave! It’s a bit pricey, but at least it has the great rating to back it up ! And this distilleries is rated number 4 out of 114 tequila distilleries. They really don’t make anything bad. … … … #Tequila #Mezcal #TequilaBar #MezcalBar #HudsonValley #Ellenville #UlsterCounty #HudsonValleyBestStockedBar #sieteleguas We have been serving this for a few years. And it's just super cool! It's a Honeybush & Turmeric "soda"! And it's from NY! It's booze-free, but don't worry a shot of vodka or Tequila can change that. Or enjoy it as is! @ouli.bev Ouli It's booze-free, but don't worry a shot of vodka or Tequila can change that. We have always driven past them on Seneca Lake. Sometimes you need to be reminded a few times to break a pattern.
Well, we are super glad we decided to stop in finally. Their Cabernet Franc blend Departure is now on our wine list at Aroma Thyme!
How is Mezcal graded?
