Back in 1999, he made a groundbreaking pledge to never serve farmed salmon, a decision that underscores the ethos of Aroma Thyme Bistro.
Our unwavering commitment to you is this: our menu is, and always will be, free from toxic, farm-raised salmon. Why are we so passionate about this? Farmed salmon, including those labeled as 'organic', still pose numerous concerns. They are often bred in cramped conditions, leading to higher risks of disease and reliance on antibiotics. Moreover, these fish are usually fed unnatural diets and their farming can lead to environmental issues such as water pollution and the disruption of local marine ecosystems through the escape of farmed species.
Chef Marcus understood these issues long before they became widely recognized, and his foresight has been a guiding light for Aroma Thyme Bistro.
