When it comes to finding the perfect wine to complement a meal or to simply enjoy on its own, it can be a daunting task. With so many options on the market, it can be difficult to know where to start. However, if you're a fan of Cabernet Sauvignon, we have a wine that is sure to impress. Introducing the 2015 vintage of Basilica del Cortaccio Cabernet Sauvignon, an elite vineyard located in Cafaggio, Tuscany, Italy.
This 4.2 hectare vineyard is a prime example of what can be achieved when using organic farming methods. The south-west exposure and altitude of 355m above sea level provide the perfect conditions for the Cabernet Sauvignon grapes to thrive. The soil, which is a silty-clay loam, is rich in minerals and is derived from grey and olive green marl limestone, as well as calcareous sandstone of 'Argille scagliose' (scaly clay) formation. The vines are trained in a spurred cordon system and planted in a density of 7,200 vines per hectare, ensuring that the grapes receive optimal exposure to sunlight and nutrients. The 2015 vintage underwent manual harvesting in mid-October, which is the perfect time to ensure that the grapes are at their peak of ripeness. The wine underwent alcoholic fermentation at controlled temperatures in stainless steel tanks, before being pressed and soaked in the marc through manual pressing and pump-overs with air. The wine then underwent spontaneous malolactic fermentation, which gives the wine a creamier, softer texture. The wine was then aged for 18 months in French oak (Tronçais and Allier) barriques that have been used once previously (medium-toasted), and bottle-aged for six months before sales start. The result is a wine that has a complex and well-balanced flavor profile, with notes of dark fruit, cedar, and a hint of vanilla. The 2015 vintage of Basilica del Cortaccio Cabernet Sauvignon received an outstanding 93-point review from James Suckling. Jamie and Marcus personally visited this winery in Tuscany in 2019 as a part of their Winery tours, and were impressed by the quality and flavor of the wine. Now, you too can experience the exquisite flavor of this wine at Aroma Thyme Bistro. The 2015 vintage is currently on our wine list and is drinking incredibly well. Don't miss out on the chance to try this amazing wine
