Agave has cleverly adapted to survive in hot, arid environments by conserving water. During the day, it keeps its stomata closed, preventing water loss through transpiration. Instead, it stores carbon dioxide in its tissues and only opens its stomata at night to take in carbon dioxide and release oxygen. This remarkable process is known as CAM photosynthesis.
